Ingredients for 2 people
One cup orange lentils
one small tomatoe
One big onion (or 2 small ones)
5 cups vegetable or chicken broth
one full spoon of cumin
2 spoons of freshly grated horseradish
Half teaspoon turmeric
2 spoons of olive oil
soak the lentils, rinse and soak again, a few times or overnight.
Chop the tomato. Boil the lentils in the broth (with a dash of salt if the broth is unsalted), together with the tomato, onion and the cumin, until lentils are soft and almost come apart (about 10 min if lentils have been soaked)
Ad the horseradish and the half teaspoon turmeric. Boil a few more minutes. Serve warm, with a bit of olive oil on top and fresh parsley.
