Easy carrot spinach raw soup

You might think that cooking raw food is difficult or complicated, but it doesn’t have to be so. This soup is easy to make, quick enough, and will give you all the benefits of raw veggies.


Ingredients for 4 people:

5-6 medium carrots

1 medium onion

4-8 cloves garlic

2-3 cups spinach leaves

dash of sea or himalayan salt, black pepper, cayenne pepper, turmeric

fresh parsley

* one small tomato

olive oil

* homemade chicken or veggie broth

* – these ingredients are optional


Place the peeled, washed and cut in chuncks carrots in a pot with water and a bit of seaq salt, the onion whole or sliced and a few cloves of garlic. Boil until carrots are soft.

* optional: for a stronger flavor boil the carrots in chicken broth

When the carrots are soft, let cool for a few minutes. Add 1-3 cloves raw garlic, the spinach, tomato, fresh parsley, pepper, cayenne pepper, turmeric and olive oil. Blend. Set back on fire and warm up, but don’t boil. Serve warm with some fresh parsley leaves.
