Honey-lemon-ginger cough candy


3 lemons

2 cups honey

half cup grated ginger

some fresh mint leaves

some cinnamon

How to make the candy:

Juice the lemons. Grate the ginger. Pour the honey in a small pot. Warm up the honey (don’t bring it to boil) and add lemon juice and ginger. Boil on very low fire while stirring continuously. You can also add some finely grated lemon zest.

Keep the honey mix  on very low heat for about 30 min, stirring continuously. It won’t look thicker, but don’t worry, once it cools down it will be thicker and chewy.

Before turning the fire off, add a dash of cinnamon (or more if you like cinamon) and finely chopped fresh mint.

This is optional, but it will help with sore throat and caugh: add a few drops of grapefruit seed extract.

Pour the mix into a pan lined with wax paper. Let it cool down and then place it in the fridge. Leave it overnight or for several hours. Cut it in small cubes and wrap each cube in wax paper.
