Easy quick pepper and eggplant

This is a side-dish really easy to make. Can be served with meat, rice, potatoes, quinoa…pretty much anything you wish.

ingredinets: one small onion, one red bell pepper, one small eggplant, 3-5 cloves garlic, olive oil, sea salt, pepper, cayenne pepper, spices

Cube the onion and chop the peeled cloves of garlic. Cut the pepper and the eggplant in long wedges, just like the french fries. Heta up some oil in a pan, and place a layer of eggplant wedges. let them sizzle, don’t stir, till one side is dark, almost black, then turn them on the other side. Place them on a plate and do the same with the remaining eggplant and the pepper.

Add the onion and garlic in the pan with more oil and sizzle until slightly golden brown, stirring occasionally. Add the pepper and the eggplant, cayenne pepper, a bit of black pepper, and some other spices depending on your taste.

Serve hot, over rice, or with boiled potatoes, over quinoa, millet, wild rice or barley…etc. Can be served as a side dish for meat as well.
