3-5 garlic cloves, one small onion, cinnamon, cardamom, cumin, turmeric, ginger, cayenne, 2 chopped tomatoes, 2 carrots sliced, one cup peas, 2 potatoes, sea salt, 3-5 spoons olive oil, water. you can use other vegetables, such as eggplant, cauliflower, sweet potato..etc.
Place the oil in a pan with the grated ginger and spices and heat up for a minute or so letting the flavors to develop.Add chopped onion and sizzle for 3 more minutes. Add the chopped tomato, carrot, peas, potatoes cut in chunks, and one cup of water and a pinch of sea salt. Cover and cook for about 20 minutes or until the potato is soft. Serve on warm brown rice.
