A light but nutritious non-spicy vegan winter dish, very easy and quick to make.
Ingredients: one sweet potato, one cup organic pre-boiled lentils, half onion, some sour cream or yogurt, sea salt, olive oil.
Peel the potato and cut it in big chunks. Boil it till it’s almost done (sweet potato boils quicker than regular potato, so keep an eye on it and don’t let it get mushy). Pour out the water and add some olive oil and the chopped onion. Sizzle for a few minutes, add the pre-boiled lentils, leave on the fire for a few more minutes till lentils warm up. Serve just like this, warm, or with some yogurt or sour cream on top, or just like that.
Serves 2 people.
