This is a great warming dish for the fall, easy to make and with an
Indian flavor to it.
You’ll need preboiled lentils, so you may choose to do them from scratch yourself or to buy organic jarred lentils.
ingredients: 4 cups of lentils, 1 small squash, half cup walnuts, curry, cayenne salt
Peel and cut the squash into big squares. Place the squahs on in a greesed pan, and toss with olive oil, curry, salt, cayenne pepper to taste.
When you peel the quash, you may keep the seeds and toast them in another pan with a bit of oil while the squash is baking.
Place in the preheated oven and bake on not tooo hight temperature for about 20 min,or until the squash is softer but NOT YET completely soft and ready to eat. Add the walnuts on top and bake for 10 more minutes.
In a pot warm up the lentils. Add the bakes squash and mix. Serve warm, with toasted squash seeds on top.
